This Gluten Free- Vegan Friendly recipe makes a delicious side dish. I served this with Provencal Stuffed Peppers and Sweet Potatoes.
Serves 4-6
225g Basmati Rice
2 Tablespoons of oil
1/2 teaspoon cumin seeds
2 Bay Leaves
4 Green Cardamom Pods
4 Cloves
1 Onion (finely chopped)
1 Carrot (finely diced)
50g Frozen Peas
50g Frozen Sweetcorn
25g Lightly Fried Cashew Nuts
1/4 Teaspoon Ground Cumin
Salt (optional)
